Three Herb Goat Cheese Frittata

Serves: 4

 

Ingredients:

2 tablespoon olive oil

8 eggs

2 tablespoons grated Parmesan

1 garlic clove, minced

¾ teaspoon sea salt

¼ teaspoon black pepper

¼ cup finely chopped parsley

2 tablespoons finely chopped chives

2 tablespoons finely chopped dill

1 small red onion, thinly sliced

½ cup goat’s cheese

 

1. In medium bowl whisk eggs with garlic, Parmesan, salt and pepper. Add herbs and whisk gently to combine.

 

2. Heat oil in sauté pan over medium heat. Cook onion until translucent.

 

3. Pour in egg mixture. Cook over medium-low heat until bottom is set and edges start to pull away from the pan. Crumble goat’s cheese over the top.

 

5. Place pan under preheated broiler for 1 or 2 minutes until lightly browned and set or, alternatively, transfer pan to 350°F oven for approximately 15 minutes. Serve hot, warm, room temperature, or cold.
