Baked Plantains

Serves 4

4 yellow plantains

1 tablespoon coconut oil, melted

sea salt

1 tablespoon lime juice

Preheat an oven to 375 degrees. Trim the ends of the plantains and cut a slit in the skin down the middle lengthwise. Place on a baking sheet and roast for 25 minutes. The skins will turn black.

Remove the skins from the plantains and cut them into 1/2 inch pieces on the diagonal.  Drizzle the melted coconut oil over them and add a generous pinch of salt. Spread them out flat on the baking sheet and place them back in the oven for 15-20 minutes or until they have browned. Remove and finish with lime juice.
