Cashew Milk with Saffron and Cardamom

Ingredients:

¾ cup raw cashews, soaked overnight

2 ½ cups water

7 dates

Pinch saffron

Pinch of cinnamon

½ teaspoon ground cardamom

1 tablespoon honey

 

Rinch the cashews and let them drain. Meanwhile heat the 2 ½ cups of water in a small pot. Add the dates and saffron and shut off the heat. Let the dates soften in the water for 5 minutes. Add the cashews, water, dates, saffron, cardamom, cinnamon, and honey into a Vitamix or other high speed blender. Blend on high for 1 minute or until the mixture is smooth. Add more honey if desired or water for a thinner consistency. Serve warm or chilled over ice.
