Plum and Fig Chia Jam

Ingredients:

2 cups combination dried figs and fresh plums chopped

2 tablespoons lemon juice

3 tablespoons maple syrup

1/2 teaspoon vanilla extract

2 tablespoons chia seeds

Combine the fruit, lemon juice, maple syrup, and vanilla in a small pot. Bring to a boil and then reduce to a simmer for 15 minutes, stirring frequently and mashing with a fork. The mixture will breakdown on its own with some chunks of fig remaining. 

Remove from the heat and stir in the chia seeds. Allow the jam to cool and thicken. Store in an airtight container in the refrigerator.
